500g (3 cups)yam(gabi)
1 Tbsp. dried shrimps
800 ml (3 & 1/4 cups) water
2 tbsp. oil
2 cloves garlic, crushed
1 tsp. salt
400g (2 cups)rice, washed and drained

1. Peel the yam and cut into
2.Wash and soak the dried shrimps in 60 ml (1/4 cup) of the water. When soft, remove any bits of shell, then chop finely. Retain shrimp water.
3. Heat oil in saucepan and quickly saute shrimps until fragrant, then add garlic and stir briskly for 10 seconds.
4. Add the yam cubes, 1/2 teaspoon of the salt and shrimp water, stirring for 2 minutes.
5. Add the rice, remaining water and salt and bring to the boil. Lower heat and simmer for about 12 minutes until rice is tender. serve hot with Mustard Greens soup.
