Turbo Roasted whole Chicken Apr 04, 2008 | big brother Meron nagrequest ng recipe for whole chickenThis is what I have come up with ingredients : - Whole chicken - Soy Sauce - lemon / calamansi - lemon grass / tanglad (optional) Stuff the chicken with the lemon grass. Personally, I dont use this :) but some say it is good. Marinate chicken on soy sauce with lemon. How many lemons and how much soy sauce? Approximately 1 cup soy sauce and 1 lemon. Usually I want the lemon taste to be recognizable. Marinate for at least 4hrs, overnight is usually better, turn over chicken every hour or 2. I use turbo broiler to cook the chicken. Set the broiler to 220C and 20mins then turnover the chicken set the turbo to 220C and 15mins. Then its done. its done NOTE : this is not yet one of my specialties but you could use this as basis for your own recipe :) COMMENTS

YAM RICE Jan 15, 2008 | mekeniabe 500g (3 cups)yam(gabi)1 Tbsp. dried shrimps 800 ml (3 & 1/4 cups) water 2 tbsp. oil 2 cloves garlic, crushed 1 tsp. salt 400g (2 cups)rice, washed and drained 1. Peel the yam and cut into 2.Wash and soak the dried shrimps in 60 ml (1/4 cup) of the water. When soft, remove any bits of shell, then chop finely. Retain shrimp water. 3. Heat oil in saucepan and quickly saute shrimps until fragrant, then add garlic and stir briskly for 10 seconds. 4. Add the yam cubes, 1/2 teaspoon of the salt and shrimp water, stirring for 2 minutes. 5. Add the rice, remaining water and salt and bring to the boil. Lower heat and simmer for about 12 minutes until rice is tender. serve hot with Mustard Greens soup. .............................................................................. | ||||||||||||||||||||
BICOL EXPRESS Jan 15, 2008 | mekeniabe 1 kilo pork meat (liempo)- cut into cubes1 head large onion- sliced 5 cloves of garlic- smash & skin removed 10pcs. chili red pepper (depende sa kaya ng powers mo) 10pcs. chili green pepper- minced 2 tbsp. of fresh shrimp paste (alamang) 1 can of cocomilk black pepper- a little -Saute garlic and onions and red peppers -Add alamang, mix well, and add green peppers -Put the meat, saute well until meat is tender. -Pour the cocomilk, simmer until sauce thickens. ........................................ Nilagang Baka Jan 14, 2008 | big brother Ito naman ang niluluto ko ngayon.ingredients (estimates) - 1 kilo Baka buto-buto(pwede rin ribs) - 1 lb chinese cabbage (ito rin yata yung pechay baguio) - 2 to 3 sweet corn (yung matamis mas masarap) / cut into 2 or 3pcs each - 2 pcs small camote(peeled cut into cubes) - 1 beef cube / bullion Wash the beef (cut into serving sizes) then boil in water - dami ng tubig (about 2 inches above the beef level) Set stove to med or med low to keep it boiling for 2.5hr to 3 hr (para malambot) Add Beef Cube (for more taste) Put in the camote and sweet corn, boil for about 15 mins Season with ground black pepper and salt (or patis) Add chinese cabbage, done in 2 mins COMMENTS

Adobong Pusit Nov 29, 2007 | big brother This is what I cooked last night :)ingredients (estimated quantities only) 1 lb of Squid 1 cup of vinegar 1 big onion sliced 3 to 4 cloves of garlic 2 pcs bay leaf (laurel) 6 to 8 pcs of whole black pepper salt procedure - saute the onion and garlic - then add the squid, cook for about 3 mins - add the vinegar, black pepper and bayleaf - add salt to taste (i used about 4 tsp) - let it cook till squid is done COMMENTS
